Meet the panel

Leticia Pollock, a proud Alumnus of the Goldman Sachs 10KSB program hosted at The Idea Center, is the Co-Founder of Panther Coffee, a quality-centered, multi-award winning specialty coffee company based in Miami – FL.

Originally from Brazil, Pollock’s coffee journey began brewing at a very young age. After moving to Portland, Michigan, Pollock met her now husband and co-founder, Joel Pollock. With a passion for Java, the couple moved down to Miami and opened their own business. Today, the Pollocks have opened four more locations all over Miami. They supply coffee beans to the best restaurants in the city and have earned the Good Food Award, a prestigious given to responsible food producers.

Pilar Guzman-Zavala is the CEO of Half Moon Empanadas, a fast-casual food concept, specializing in non-traditional locations in Miami offering over 20 flavors of Argentinian-style empanadas.

Half Moon has been successfully in business for 10 years and over 13 locations, in the following venues: Florida International University, Miami International Airport, the University of Miami, Saint Thomas University, The Miami Beach Convention Center and the main commissary in Miami.

Pilar’s dream is to make Half Moon Empanadas a household name. Today, Half Moon Empanadas is the #1 bestseller per sqft. at the Miami International Airport. Under Pilar’s leadership, Half Moon Empanadas was awarded the highest recognition in the Miami International Airport as the “2016 Best Concession of the Year” and “Best Customer Service in 2016, the OYA award”. Half Moon Empanadas has nearly tripled its revenue and currently sells over 600,000 empanadas a year.
